What would cause no seed kernals in cucumbers?

So I was growing Marketmoore cucumbers this year in my garden. I harvested a few larger ones earlier in the season and there were no seed kernels in the seeds. I figured, okay, I harvested them too early and I'll leave a bunch later in the season to fully develop.

Some months later, the cucumber plants have died back and we have quite a few cucumbers that have thick, hard veiny rinds and I figure it's time to start seed saving.

So I cut a bunch open and scoop the seeds out and again, about 80% or more of the seeds are paper thin with no kernels in them.

Any ideas on what would cause this? Could it be a Magnesium problem? I know Florida soils tend to have low levels of this mineral in particular.
