best soil for vegetables

Dear Sirs,
For two years I've been trying to grow vegetables in four 4'x8'x18" planter boxes, but with little luck. I live in Phoenix, Arizona and know when to plant, but all the vegetables and marigolds I've tried to grow, get to a height of four to six inches then perish. they are also watered once to twice a day because of our heat.

I'm curious to know what perhaps is the best soil for vegetable gardening as I've tried to amend the dirt at my house a handful of times. Initially it had a lot of clay so I added sand, loam and manure to it. When I pull up the vegetation, the roots are extremely sparse like something has leached them of their nutrients.
