Fall Potatoes - N. Texas (Dallas)

I'm very new planting potatoes. I bought a bag of Yukon Gold potatoes earlier this year and planted them a bit late (April) and they did pretty good. I think I harvested them in June and had a bunch of small potatoes that I kept in the fridge. I dusted them with sulfer before putting them in a bag of rice in the bottom of the fridge. I've heard that you can plant them in the fall also. My question is, can I plant these potatoes that I recently harvested? and when?

I was hoping that since they were in the fridge, the cold temperatures would trick the potatoes out of dormancy.
