Best early waxy-type potato

| For potato salad, made from new potatoes. My favorite overall are Russian Banana fingerlings, but they're a late potato. |

In my opinion, Nicola, hands down. They're early, give high yields, are super tasty and they keep well.

Well I boil most of my potatoes, regardless of variety. Yukons i'll bake sometimes, and the nicolas i'll roast. The reds I grow (pontiac, norland, dakota rose) all are flaky, not waxy. I like the nicolas because they hold together well after cooking.
No one else chiming in? Everyone must like nicolas too..... |

| I grew some Nicola this year for my daughter-in-law who is diabetic. Nicola is supposed to be low-glycemic. It's a lovely potato. Also grew some Nevskij, the most widely grown potato in Russia. Boy oh boy, they're really tasty and they hold up well to a very rainy season and heavy soil. Spartan Splash also performed well for me and is great tasting. |

| What about bintje as a boiling potato? I made potato salad with my new norlands the other day and was surprised how flaky they were. It tasted great, but the texture isn't what I want in potato salad. |

| You might want to look at Red Dale, an early high moisture (waxy) potato. |
