Does anyone have experience with Belgian Endive?

Planted seeds on May 19, as was recommended. Two of the twelve plants have started to bolt, so obviously I must've planted too early. My question is, will I still be able to harvest the roots of those plants in the fall for winter forcing? And second, will it make a difference if I cut off the flower stalk? And third, should I have planted the seeds in June? Hopefully someone has successfully grown this, and can help me. It's one of those very expensive vegetables that I would love to be able to grow myself!

I have experience with chicories (salad, Catalonia, various radicchio). Some plants bolt in the first year, but it is a small minority here (like, 2%). endive is chicorium intibus.
