Cover Crops: have your cake & eat it too?

Anyone have experience / ideas for cover crops that will help the soil AND provide some amount of harvest? For many common cover crops (say fava beans), conventional wisdom is that if you wait until you can harvest beans, the soil isn't really going to benefit all that much from those plants (plus they'd be large & take a long time to decompose).

But in response to another post, someone mentioned harvesting pea leaves and that got me thinking that there might be some quite interesting options for beneficial cover crops with edible leaves.
