Zone 5b and mine is evergreen.

A lot of salvias will stay evergreen from 20-30F, but a lot don't look so great in colder environments even when they do survive the cold periods. The lower-growing mounding ones tend to look better during cold times.

Salvia mexicana 'Limelight' is my all-time favorite salvia...evergreen, but most people cut it back in colder times because it's not so great looking during the winter. The new growth vs old growth contrasting shades of green along with the vivid purple flowers are amazing.

I'm not sure what kind mine is -- I planted it from seed and it is now a woody little bush.(seed packet just says "Garden Sage") But it has survived temps below zero farenheit some winters, and always into the single digits. Doesn't look terrific right after winter, but it always bounces back. And the purple flowers are amazing.

Common sage and berggarten confirmed evergreen here in VA.

Sage loses its leaves in winter in Zone 6 (they may stay attached for a while, but they are dead), although it is perennial. In fact, Mediterranean varieties (which are bigger plants with bigger leaves) will not make it here, unless planted in a sheltered sunny spot (against a southern wall). The sage grown in colder climates is a Balkan variety with somewhat small, narrower leaves. Rosemary is inevitably winter killed.

I was trying t figure out how much to harvest now, and how much to leave, and you really helped me out :).

Nila, here in Mississippi, culinary sages are green through the winter but typically rot out in the humid heat of summer. I treat them as cool weather annuals and replace them each year...about now. Time to look for transplants. I love tricolor with pansies, but I haven't seen any the last few years.
