Red�and apparently purple�malabar spinach coloring

Hey guys
So I planted some red malabar spinach this summer (from seed) in 3 locations around my west-facing suburban home. The one at the top of my driveway�where my house and fence meet�is producing a lot of those little dark purple berries. Busted open on a white surface, they are a beautiful (and staining) rich purple. I understand this is used as a food coloring and dye around the world, but haven't found a guide on how to extract the color. Could one press the berries through a juicer? Wouldn't that be more like juice? How to isolate the pigment, any ideas?
And has anyone here eaten the berries?
