Overwintering Artichokes in Zone 7

Charlie

I planted these artichokes from seed in the winter and transplanted them into the raised bed in late April. I am now preparing to get them ready for the winter so that they will grow in the spring and hopefully produce next year. My plan is to cut them back to about 8 inches after the first good frost; cover them with about 12 inches of compost; and cover that with a pot. I will uncover them around April 15 (after the last frost) and rake off the compost. Thomas Jefferson grew artichokes as perenials in Virginia, but I have found no procedures that he employed. Any suggestions on the type of compost to use or a variation of my procedures?
