Is there a trick to broccoli/cauliflower?

I've now tried growing broccoli romanesco twice (more closely related to cauli than broccoli), and I've failed both times.

First time I planted it in the spring, got huge leafy plants, but no heads. This time I planted them after my corn harvest so they would mature in the cooler weather, but again I never got a head. I just picked seed pods off the thing where it had bloomed and set, but never anything remotely resembling a head.

Is there a trick to this that I just don't know yet?

I have found that starting my brassicas as transplants always helps.

Shouldn't be too much of a secret to growing either broccoli or cauli though -- 1st thing I ever grew was broccoli and had success in moderate soil and novice gardening technique.

Bonnie plants says STEADY cool temps in the 60's( I imagine that's daytime or soil... dunno.
