what to do with not-quite-ripe winter squash?

I have about 5 very large neck pumpkins (aka pumpkin squash) and a half dozen smaller butternuts that are still kinda pale and not yet the salmon/tan color they usually are when fully ripe. The vines are mostly dead. Will they ripen anymore or should I just try to use them as is? I haven't cut any open yet to see how they look inside.
