When do I harvest my noodle beans for the seeds?

I have 2 red Japanese noodles beans I let grow so I would have seeds for next year. They look kinda pregnant now. Do the shells dry up by themselves when it's time to pick them?

When the pods are fully dry (like paper) and the seeds rattle inside the pods.

When saving seeds from yard-longs, I leave four or five prime pods to fully mature in late summer. Eventually they do turn tan, with small beans inside. There is often 3 inches or more between beans within the pods, so you need several pods to get 20-30 seeds.

To the advice already given, I will just add that the dry pods are too thin to protect the seeds from moisture, and the seed inside will spoil if the pods get wet for a prolonged period. So if rain threatens, pick any dry or near-dry pods & bring them indoors to finish drying.

For "Red Noodle", the seeds are a little more closely spaced than the yardlongs mentioned by Planatus. However, other varieties I have grown had seed 2-3" apart or more. One I grew this year, "Three Foot Plus", had such wide spacing.

The odd thing is, the seed count per pod seems to be fairly constant across a range of varieties. As a rule, the seed spacing increases proportional to the length of the pod. You will generally get 10-15 seeds per pod; this can vary up or down a few, depending upon conditions & pod length.
