Common question over on the Growing Tomatoes forum here so you can find more info there. But usually what happens is 1 or 2 new branches will eventually sprout from the node on the stem that is just below the break. Unfortunately they will be weaker secondary stems but still worth some production.

This is just one of the prices one pays when you choose to prune plants to a single stem.

A picture is worth a thousand words. But, ten to one, the tomato plants are going to keep on growing, just give it some time.

You can also save the broken top. Put it in a glass of water in the window and the stem will put out roots, then you can plant it in pots just in case your other plants don't make it, although they should put out new growth.

Some people top their peppers and tomatoes to make them grow bushy rather than tall. So I believe that the plant in question should survive and grow multiple branches.
