Which type of patio pavers?

We're going to get rid of our grass in the back yard and just have the pool, big garden beds, a deck and patio pavers.

We've looked at the different styles of patio pavers and have narrowed it down to two. Either a tumbled rectangular 6" x 9" stone or a roughly 21" x 16" irregular flagstone-type of stone.

Given that we have quite a few curves to negotiate around the pool and the garden beds, would it be a lot easier to use the irregular flagstone-type? I'm thinking the rectangular stone would require a lot of cutting...

Probably a "duh" kind of question but I'd be really grateful for any advice!

What about doing a stamped concrete? You can get the same look as flagstone or other patterns and it would look elegant around the pool area. Check this out. It may also be less expensive. But I can tell you right now that it is a popular alternative to stone and may have some expense. With that said; I encourage you to explore this avenue.
