Starting a Landscape Project in Late Fall/Early Winter - Bad Idea

We just signed a contract to begin a large pool remodel that will also include a complete landscape project. The pool side of the project is projected to start on 10/9 and end 12/31, while the landscaping will start 10/25 and end one or two weeks before the pool finishes.

My question is: Is this a bad time to put new plantings into the ground? We live in Sacramento, CA. I think the plantings won't go in until mid-December. It is quite a large project that will include 8 new 15-gal trees, 40 5-gal shrubs and 60 1-gal plants.

We have a 60-day guarantee, but will it be enough to cover us through potential frost? Or if we're so lucky, winter rains?
