The existing rock, which i believe is fieldstone, is reacting with the chlorine and causing brown stains on the walls of my pool. The builder say it is the magnesium. I need help knowing what kind of rock to replace it with that won't get slimy and not cause the staining problem i am having. Thank You.

You would probably get better information if you talk with local pool installers and local rock yards in your area to find out what is available and non-reactive. Less porous rocks will tend to stay cleaner, but if the waterfall is using chlorinated water, you shouldn't be having a problem with algae growing on the rock in any case.

A widely used stone for waterfalls in the northeast is pennsylvania moss rock which has a nice natural look and does not create the problems which you are describing here.
