Are they organic and free range?

If not I'd say $12-16/doz. for goose eggs $6-8/doz. for duck and guinea eggs (depending on how big they are), 50% more if organic and free range.

Figure what cost of production is and work from there. It is sometimes difficult to develop a duck egg market in some areas. if there is an ethnic market available, try and tap into that, asian. maybe make some balut!! I used to sell duck eggs for consumption to bakers who believed they made the best cakes and noodles, I got 3.00 per doz. which was 6-7 yeras ago. never sold a goos egg for eating but quite a few as hatching eggs(American buff & Auto sexing). I do know a very few people who have good duck egg markets, one of them is in Englan.

I am used to biog city specialt food store prices, and was assuming your small timey nature might give you a pricing edge, so I'll believe that my prices were a little high.

With inflation that $3 in 2001 is about $3.60 now.

Yes, they would be free range. Hope to get my organic certification but don't know yet how easy that is for a newby and a new farm. They will be fed all-natural food regardless.

Cost of production plus a fair profit. organic or whatever. Costs may be more with organic or they could be less, depending on management skills and practices. Growing "organic" is no excuse to gouge the public. Only you, the producer, can determine what a fair profit is to you. Many Amish place a very low value on their time and investment, others place a very high value on theirs.
