I don't see any reason why you cannot have only one duck. We have a duck that we have had to seperate from the flock due to injury by an over aggressive drake. She is very happy by herself. We let her out of the barn everyday to go play in her water bowl.

Ducks really are flock animals and are much happier in at least a pair. If you only get one, I hope you're lucky enough to get a female.
