Does anyone have knowledge of Caponizing.

Which are the best birds for flavor.

Capons went the way of dinosaurs after the development of the Cornish x Rock hybrids which took their market. caponizing is not for the beginner, it involves going thru the ribs to remove the testes.

I am well aware of what you say. However Caponizing is still taking place. It produces a far superior bird. I am looking for people with experience.

They still sell caponizing equipment. I guess some dinosaurs are still alive.
