I raise them and sell both flowers and berries. The flowers make a great cordial or tea, and the berries are awesome as jelly, jam, wine, or tinctures. See if you local health food store would buy. You won't get rich off them, but they're another item of interest to add to your inventory.

My Elderberries are still too young,but I've read that the whole umbel is dipped in batter and fried as a dessert. Brady

You can also make a sorbet from them. And fritters as Brady said. Elderflower presse and cordial are sold commercially over here. Its really taken off over the last couple of decades.
