All American persimmon are astringent.and so when you cross or back cross a non-astringent Kaki to the astringent American persimmon for cold hardiness, the astringent trait will be dominant.

If it is a recessive single gene trait, it would require a couple crosses. An AmericanXkaki hybrid would be heterozygous, and so crossing such a hybrid to a non-astringent kaki would give some non-astringent offspring. Alternatively, an American X kaki hybrid crossed to an American X kaki hybrid (not aware of any examples of that) could yield non-astringent offspring, assuming the starting kakis were non-astringent.

That's what I thought too, Alex. But, I figured if it could be done with relative ease, it would be. Seems a no brainer considering the popularity of NA persimmons, especially in Asia.

I guess I was wondering if other mechanisms might be at play preventing the development of an NA hybrid.

It takes about 7 years for the F1 cross to fruits and each back cross takes another 7 years and the process continue.... It is very time consuming process to breed a hybrid. The creator of Rossyanka and Nikita's Gift from Ukraine died and took all the secret with him and we don't even know which varietites he used in the process. Rt now most breeder used his male Rossyanka to cross with other Kakis and back cross to American persimmon.
