Mouse damage - Can I save girdled trees?

Mice/rabbits did serious damage to my trees and I am hoping there is something I can do to save them. They chewed all the way around leaving no bark. Can I put a paste or tape or anything to try and save my trees?

Barring that, I should be able to keep the rootstock correct? Can I graft something onto the existing rootstock? Thinking maybe chop the tree down, leave a clean stump and use a piece from the tree to try and graft it somehow????

My one Mutsu apple, there is no bark but it does not look like the mice dug in and chewed deep. Just on the surface if htat makes sense. Any hope for this tree still???

Looks like I am losing 8 ball white peach, just coming into bearing age this year, mature empire apple, mature mutsu, 3rd year Honey crisp, 2nd year crimson crisp. most of my grape vines. Not sure what else right now. Does not look good.
