Good apple tree type?

Hi, first time poster here. I am moving to the mountains of Southern California in Lake Arrowhead, and we are considering planting a few fruit trees. We really want to have an apple tree planted. Does anybody have any recommendations about what variety would thrive in our climate? It is in zone 8B. Thanks in advance!

Hidden in the hollows and former logging camps around you are some ancient Rome Beauty apple trees, the dominant variety from pioneer days up there. It is self-fertile and comes into bearing quickly, and is fantastic off the tree and makes great pies. Make sure it is Rome Beauty and not "Red Rome", the modern version that is not nearly the quality Rome Beauty is.

You'll have to deer-proof it until it is taller than the browse line.
