Cross pollinated strawberries?

Hello,

I have three varieties of strawberries growing, I have been hand pollinating them with a soft fine paintbrush the past month they are still growing more and more flowers, they are now growing into perfect sized fruits they are half ripe.

I have been cross pollinating them will that affect the taste and the seed viability? as i plan on keeping a few of the seeds from each fruit.

DO the seeds need a chill before i can plant them?

I believe the strawberry varieties are ELenasta, Cambridge Favorite and a lucky pick lot so I don't know but i know it's all early mid and late fruiting types 5 of each. all in same bed rather close, they was rooted runners i'm surprised they have fruited though.
