Callaway is a favorite for eating-out-of-hand here. Fill your pockets and munch away. That said, Callaway fruits are 'large' for an ornamental crab - but will at maximum be only 1-1.5" in diameter. But as it gets older it's a heavy producer.
Centennial, Kerr, and Bastian Orange crab do well here, fruits are larger, and well worth growing. Chestnut and Wickson generally get rave reviews for fruit quality, but I've not got either in my plantings.

If the apples are supposed to be 1-1.5", and yours are smaller than a dime, I'd suspect that what they sold you was not the apple you were expecting. It happens -- I bought a Carrol apple (kind of like a Mac), grew it for several years until it was big enough to fruit, then it produced monstrous fruit with a skin so thick it was like a rind not a skin. Also was sold a Brook Red plum that was nothing close to a Brook Red.

As for pollinators, they have to be a different variety of crabapple or apple than what you grow, and they have to be within about a city block of you... bees travel. So if you are in a city lot, there are probably dozens of pollinators in your neighbours yards that will do just fine. If you are on an acreage somewhere, then you need a second one. In that case, I'd just let your little ones grow another year or two and they will fill the role.

I hate it when they sell you something other than what's labeled! The last two years my cherry tomatoes grew two inches in diameter. I bought from the same place figuring it couldn't happen twice. I even asked and said are you sure. I can't imagine getting the wrong trees that would be a lot worse.
