No worry, grapes are very good at replacing any mishap like this. You won't lose much growth or affect next years crop. This assumes the grape has decent vigor.

Exactly, one of the laterals can be encouraged to become a central leader. You will find when you start to train them to a trellis, this is what you will be doing every year anyway.
