I would speculate that it has reverted to a vegetative state to repair the damage. I would suspect once it has fully recovered it will go back to a fruiting state and produce flowers.

but this persimmon has grow way bigger than when I first bought it. It's sure to be recovered by now? Or maybe the greenhouse I got it from had something to do with it?

If it was a grafted tree and it broke below the graft union, what you have now may be the root stock and not Fuyu at all anymore.

It will grow to the size and age for which it is suited before it decides to flower and then may be male, or female needing pollination.

I guess I didn't realize from your post that it broke below the graft union. You might want to consider simply bark grafting a variety of your choice to it. It will generally start producing fruit in the third leaf when grafting to established root stock.

The graft seems to be very if the break was below the graft. The breakage is at near the top of the tree. How do I tell if it broke below or above the graft?

If it broke near the top of the tree, it is above the graft union. You can find that by simply looking at the trunk from ground level up, You will see where the tree was grafted and healed. Given that, I go back the advise in my original post.
