Been away 10 days, plenty of rain. Peach tree growing tall, a lot of branches. Should I remove all the branches and continue to let peach tree grow or leave as is. The main stem looks to be getting thicker since I remove braches coming from the bottom and below the dirt

I'd let the tree grow some more.Pruning can always be done in the Summer.The longer branches can be tipped a little,if they look like they are getting too long.
Peach trees are usually formed into an open vase or goblet shape,with 3-4 branches pointing in different directions and spaced several inches apart going up the trunk.There is still time to do that with yours.
The energy is now going into the other branches,once those suckers were cut off. Brady
