A neighbor is making ice cream for our town's 4th of July celebration so I offered her a qt. of frozen raspberry juice from my 2013 Caroline crop. The juice was sieved from the fruit leaving no seeds in it.

Caroline isn't a very sweet berry as I've been growing it here but does have a nice, strong flavor. I like the juice for blending with apple juice making a delicious apple raspberry flavor. It doesn't take much of the Caroline juice to make the apple taste a lot like raspberry.

Anyway, My neighbor used the whole qt. of juice to make a gallon of ice cream and MAN, talk about strong raspberry flavored ice cream, it's delicious. Finally found something else to do with all of that Caroline juice:)
