chill factor

As I live in the uk and being a new starter with fruit trees can someone please explain this chill factor thats often mentioned.

In order to produce fruit, some bushes and trees need a period of dormancy. This is naturally provided by cold weather. The more northern a variety, the longer the period of dormancy needed since the point is for the plant to be dormant throughout the winter. This period is usually described in days or hours.
