Peach Grafting question

None of my peach tree scions survived our exceptionally harsh winter but 3 of the 4 rootstocks have healthy sprouts.

Wondering if I can purchase a couple of bare root peach trees for next spring and graft from those on to the rootstock sprouts. (note I have almost zero experience grafting)

Most bare root trees that I receive aren't as dormant as I'd like for grafting scions. I'd have to think you'd have that also considering you'd need the scions a month or two later than down here.

If you could get green budwood in about a month you could try T budding. That probably won't be easy either. Probably not many live peaches in all of MN right now.
