3rd season i have this peach tree. i have been noticing this year this cracking/peeling of bark at spots, as well as wood "bleeding". not sure what this means and how to treat or how to determine what is causing this. the tree seems pretty healthy otherwise, it got insane amount of growth this year so far there is over 2' of new growth (image 3). do i need to prune now? do i need to thin in the middle?

Perhaps bacterial blight/bacterial canker.

The palces oozing try poking around in them with a straightened paper clip. That will kill a borer and it will heal up. the other may just be splits from the amount of growth.

You are doing a great job on shaping your tree
