Hello, I live in Southern California, and have a two year old white winter pairmain and winter banana apple trees. The fruit is going from green to overripe and mealy on the tree, then falling off. It's as if they are skipping the normal ripe period. Any ideas what could be the problem?

Could also be the tree isn't large enough or old enough to support the fruit. 2 years isn't really old enough to let the tree produce and you probably should have removed most if not all of the fruit to induce more root and scaffolding branch growth.

I'm in a completely different part of the country and I noticed this with my Viking tree that produced 3 apples this year. They suddenly went red and meally before I even noticed they were ripe. These were the first apples from the tree so I didn't know when they would be ripe. Maybe it's my own naivete about the situation.

Appleseed: you mentioned weather too hot? This certainly has been the hottest year in record in 70 years. It has been warm/hot since February.
