Slip skins are mostly used for juice because the skin is leather like and slips offs the grape with a pinch. Concords as you are aware have a great flavor for juice whereas with table grapes such as red canadice they are seedless and the skin can be eaten. Each has their own purpose. Table grapes can be used for juice and vice versa but each was propagated for their specific purpose. Wine grapes are another option.
