I have dwarf shinko and it is sweet and juicy. I do watch it for shepherds hook. Have not had it as yet and the tree is 10 years old. Some trees are more subject able to shepherds hook than others and I would diffidently look into that.

Chojuro is more brown russeted, no spots. The other two have spots. Its also more fibrous/chewy. Hosui is similar in looks to Shinko but it tastes a lot better (at least in my orchard). Shinko's main claim to fame is fireblight resistance.

how is chojuro skin to touch comparing to hosui and shinko? Thank you.

I haven't really noticed a difference in the skin of Shinko and Chojuro. Maybe the color is slightly different. I don't have Hosui, so I don't know about it.
