Fruit trees: what should I do before winter

Hello,

I have 7 fruit trees in my yard and I'm wondering if I should do anything before it gets too cold to ensure optimum growth in the spring.

Two of the trees are dwarf peach planted in Nov '11. I didn't do anything for them after planting them and they seem to be doing well. The other 5 trees are: 2 plums, 2 cherries and one nectarine. They are all very small and were planted this summer.

I'm in northern Ohio (zone 5). Should I do any pruning and/or fertilizing now? Should I do anything to protect them from the winter?
