Does persimmon fruit size vary with pollination ? I have a non astringent variety planted by a previous owner. I planted a couple more trees (coffeecake and chocolate) and now the fruit size on the first tree is about half of what it used to be. 50% of the fruit I have harvested so far are seeded.

I don't believe that fruit size is influenced by the plants that pollinate it. Fruit size is dependent upon, water, sun, nutrients, temperature, the number of fruit on the tree, and the genetic variety. There are 2 varieties of fuyu, the normal fuyu that is about 2.5 inches in diameter and the giant fuyu that is about 3 inches in diameter.

http://msucares.com/pubs/infosheets/is1446.pdf says Gosho or Giant Fuyu fruits can be larger when unseeded. I guess my question then is has anyone seen this behavior?
