According to applenut, many varieties of apple do just fine in our low chill area. from personal experience I can also say that certain peaches and plums do well with 300 chill hours: mid pride peach, tropic snow peach, red baron peach, Santa rosa plum, Burgundy plum.

Malibu California Wholly cow this area is similar to mediterranean weather which I lived in it once ( Hot dry in summer and warm and rainy in winter). I wish I am living there. I think you can plant any thing you want. I am not sure about Apple. If I live in California I will plant Palm trees, guava and Figs.

You should get enough heat for lemons, limes, and Valencia oranges. Navels can be problematic because they need more heat over a shorter period to sweeten up. For the same reason, early peaches can be mediocre. Arctic Star nectarine does really well here, though. I'm also growing seven apple cultivars, but they're pretty thoroughly confused.

Does anybody know what is the best way to protect trees from deer. They recently help themselves with my trees.

Not an expert on deer protection...but I know you must pay close attention to low-chill varieties of deciduous stone fruit. Lash down trees to protect from your east winds, as well.
