Can I prune my grape vines at any time during dormancy?

In 9a, NE Florida, it is recommended that we prune in January only.

I prefer to prune just before bud break as that delays growth a bit. In your zone it's probably more about mid winter hardiness. If fully hardy you can prune now but it's probably better to wait until after the real cold.

I prune mine around New Year's. They do fine. In this NW climate, there can still be some hard freezes after that, but they do fine.
