I have found many books about peaches in internet. I think i might give you address to them, if you want to look into them.

Next book is not perhaps much about growing peaches, but changes in peach composition during growth, storage and ripening, so maybe someone want to look at it also, if it has some effect on peach flavour. Book name is : Studies on peaches. I.Compiled analyses of peaches. II.Changes in chemical composition of the peach during growth and ripening.III.Effect of the storage on the composition of peaches. Book has 50 pages on PDF file and it from 1905. You can read it online, read text or PDF file. Here is the link:

Next book is from John Stewart from 1908 and has 14 pages in online version. That book has some peach varieties describtions. Book name is Peaches for Pennsylvania.
