Coffee plant: First winter, watering questions

Hello all!

I acquired a Coffea arabica plant in June of this year. It was about a foot high when I got it. I was told it was roughly a year old. It's been doing splendidly on a bright, wide window sill.. several pairs of beautiful, shiny new leaves in the past few months.

In my research on its care, I've noticed that a few suggest cutting back on watering from late fall through winter. But, when discussed this is often suggested to spur the plant into flowering. From what I've read, the plant will not even think about beginning to flower until it's 3-4 years old.

So, my question is:

Should I cut back on watering during the winter, even in the plant's early years? Do coffee plants require a simulated dry season to "rest"?
