That is very interesting! Well, since we know that Yucca can be re-rooted from cane cuttings, I guess it makes sense that it would throw out roots. I guess something about the stress of going without water made it desperate. What a survivor!

If it was my plant, I'd make several cuttings of the part with roots and get those roots in soil just so I didn't have to look at them. :)

Lol, I suspect the roots are ever present in an arrested stage of development under the leaf attachment point. Take a look at English ivy...for an example.

Since the leaves fell off, the roots are exposed and whatever inhibits them (produced by the leaves I'd guess), is no longer there...and they start to grow.

It probably makes sense...if you stop and think about rock slopes where these plants naturally grow. Assume a landslide buries a large part of the stem, causing the leaves to eventually rot and fall off...and the plant sends out new roots to stabilize itself in the soil and catch whatever rainfall falls on the thin soils.
