What to do with my Lucky Bamboo?

Hello. I have had this lucky bamboo for about two years and finally it is outgrowing it's little pot of water. The apple in the pic is there for scale!
I've never dared peek inside to really see what was going on. I could see it was in jel of some kind. I have been watering it mostly with plain tapwater and I've only fertilized it twice.
Lately I noticed it pushing out of its little pot so I dared to pull it out and found it was completely full of roots. I know I should put it in a larger container of water but what to do with the roots? Should I hard prune it as if it were in soil, or just gently tease the roots apart a bit?
I know you guys will give me good advice.
