I always liked a cobbler that had a "piecrust" like top. Then GF had this 1 & we all love it & it's so easy. "Esther's Easy Cobbler" Melt 1/2 c butter in 9x13 pan. In bowl mix 2 tsp baking powder 1/2 tsp salt, 1 c.sugar,1c flour, 1c.milk Mix well. Pour over butter in pan.Don't mix. 1 qt fruit if fresh bring to boil in pan & sweeten to taste.Pour over batter.Don't mix Bake at 350 degrees or until golden brown. Serve with whipped topping,whipped cream or ice cream. This is a "lighter cobbler then some! No fresh fruit, no problem. Use canned apricots, peaches or fruit cocktail or 16oz frozen berries or rhubarb(if frozen as you sweeten same as for the fresh berries)And boysenberries are excellent- I've made it with frozen ones!!
