Has anyone ever removed their old lawn to reseed?

Is their a name for this process? I noticed some homes had their lawns completely removed and it looked like they were just adding more dirt and preparing to seed.

I guess if you physically remove the grass with a sod cutter, you could call it desodding. You can also kill all the grass with Round-up, which is a better option since you aren't removing topsoil, and you won't need to bring in new topsoil. Also the killed grass will hold the soil together, preventing erosion, and as it decomposes will add organic matter to your soil. The process of redoing a lawn from scratch is generally called a lawn renovation.

Renovations can be done in many ways. Adding more dirt is not necessarily a step in the process. In fact that aspect needs careful evaluation before making that decision. Usually adding more dirt changes the way the soil drains. If you change the drainage such that water flows into your basement or under your piers, then you have very serious trouble.

Do you live somewhere with palm trees and people are seeding their lawns? With the exception of bermuda, which is seeded in the summer, most southern lawns are sodded rather than seeded.
