How much and how often should I apply to help with poor drainage?

None and never may be the answer for you in NJ. Here is another thread on gypsum. Gypsum is mostly used on sodic soil which I do not think exists in NJ. Organic matter and soil conditioners may be your best choice.

A soil test is in order before you start applying most amendments, including gypsum.

How much damage could be done if I already applied some? I went to a local nursery and they told me if I had alot of clay in my soil I would benefit from applying 5, 30#bags. I have 15000 sqft.of lawn.

I know I should have checked this site before I applied but the salesperson was so convincing that I just went ahead and applied.

No damage really, just to your wallet. Most lawns are deficient in calcium in the east, so you probably needed it anyway, but if your pH is low calcitic lime would give you calcium plus it would raise your pH. Theoretically too much calcium could make your soil too loose, but I am sure this won't be an issue for you. Next spring do a soil test (Logan Labs, basic test $20 is a good one) and go from there.

You should always perform a soil test first to determine what your soil needs. Some coastal soils in NJ can have high sodium levels and gypsum can be effective in flocculating (loosening) tight clay soil. If gypsum is what you need apply 23-70lbs per 1,000 sq. ft. initially then maintain annually. The above post(s) are correct. You won't hurt anything except your wallet by over applying.
