There are two varieties of marigold in this picture. Are these taishan marigold and African marigold? Please correct me if I'm wrong

Marigolds, Tagetes. Maybe someone here will know the specific variety.

were these grown from packets of seed???

if not... they degenerate to some extent thru open pollination

I would say they are Tagetes erecta.

'Taishan' is merely a MIX of varieties of T. erecta bred for dwarf habit and low branching. It's name has no botanical standing.

I'll suggest that you visit one of the many on line mail order sites and look at the zillion pictures of marigolds you'll find. Seed catalogs can be very educational.
