That looks a bit like Dysphania ambrosioides (Mexican Tea, or Epazote). It also could be something more weedy, like Dysphania pumilio (Clammy Goosefoot).

Epazote or some other Chenopodium would be my guess too.

Hi When I go for a walk in a nearby bush walking track I see this herb/weed it has a very aromatic scent. Do you know what it is ? Seems interesting.

Here is a sample I have that is already 3/4 dry.
It has a slight feverfew/mint aroma and is very hardy (drought tolerant)
Its not rosemary...

The flowers visible rule out rosemary. But other than that, I can't help. I've never seen this one before and I have seen a lot of herbs. It isn't any of the common herb plants - that I'm sure of. Perhaps something indigenous to Australia?
