This plant grew out of a random seed from a packet full of different flower varieties.

What is it?

Eggplant, possibly the decorative varieties such as 'pumpkin on a stick'?

Well it's not an edible eggplant, but it should do fine with the veggies.

I think that is an edible eggplant and not pumpkin on a stick. Pumpkin on stick leaves are more oak like. Of course if the leaves change and become elongated and wavy edged as the plant grows then yes it is the ornamental Pumpkin on a stick. Otherwise it is a stay veggie seed that landed in the flower packet.

No, more likely a veggie seedling that I mixed in with the flowers when I repotted.

It's doing well in it's new home.
