Grass Tree? Agave?

I bought the plant featured in the 1st two links below at my local botanical garden (SFBG) but the volunteer who assisted me may have misidentified it as an Australian grass tree.

Walking around in the SFBG today I encountered what appeared to be a much larger specimen of the same plant, though the contorted bits are not present on the much younger specimen I bought.

Any suggestions?
I live in San Francisco, CA, and I'm trying to find out how to care for it.

I think you nailed it. The SFBG has these plants in their "Dry Mexican" garden, and they are nicknamed "Grass Tree" just like their Australian cousins. The SFBG also has a spectacular Australian grass tree; it looks very similar but its leaves are noticeably thinner. Another cautionary tale in vernacular names!
